Playoff baseball, the heart of college and NFL football, WNBA finals, and the verge of the NHL and NBA seasons.
This last weekend was full of nail-biting competition and it seems like every night this week there is a different great game to watch.
Something about watching sports lends itself to prime snacking, a bit of a paradox when you think about it. But snacking does not have to be synonymous with unhealthy eating. Here is one of my game day favorites:
Buffalo Couliflower:
All you need is a head of couliflower and buffalo sauce. My favorite is Frank’s Red Hot, but choose your favorite, only making sure that your chosen sauce has no added sugar or butter and a reasonably low amount of sodium. Roast the couliflower in the oven or air-fryer until the florets have browned slightly then toss in a bowl with hot sauce!
Just try it. Delicious and nutritious.
If you must, before cooking you can toss the couliflower with some whole wheat flower or bread crumbs, using a little olive oil, almond milk, or aquafaba as a binding agent, and make breaded buffalo couliflower.
Either way a delicious snack that fits the occasion. Game on.
